I am neither a huge fan or a no fan of cupcakes. I settle somewhere in between. Though a trip to Dubai Mall's Magnolia Bakery changes the whole game. The craving for these little sinful monsters just suddenly appears at the sight of those pastel-colour icings and dainty adornments - it does remind you of grandma's treats back in the days; so comforting and finger-licking good!
And once, on very short-notice, I had to compete amongst other long-standing bakeries in Dubai for the 2012 Cupcake Mania instigated by TimeOut Dubai.
Together with my pastry team, we went beyond our boundaries for the sake of fun. We didn't really aim to make it to the top. It sufficed we had delivered something interesting enough. So we came up with the following flavor combinations for our outlet PRONTO:
- Tamarind with Valrhona Manjari chocolate prepared as ganache
- Madras yellow curry with kaffir lime and coconut gianduja prepared as an icing
- Mangosteen with maple and cream cheese buttercream
After the cupcakes were sent out, we moved on and almost forgot about it. There was no telling we actually made it to the top!
We got the highest possible score of 4/5 besting other bakeries including my favorite Yankee cupcake bar.
Whether it was the extreme idea or organically the flavorful fusion, TimeOut Dubai had given us the thumbs up for being the most creative with the Curry Cupcake gaining the most "likes".
One of the obvious reasons why cupcakes will always remain a favorite on this earth is its versatility.
That victory prompted me to embark on several special cupcake projects involving start-up businesses and workshops.
