I received a number of questions about what to do with leftover dough and the bunch of balls that come rolling after picking up the raw doughnuts (I am partly to be blamed for with our long coverage of the mighty cronuts).
The easiest way out is either coating them with cinnamon-sugar or icing sugar.
But let's make it more fun by extending your work load further. Boil some freshly squeezed orange juice with an equal amount of sugar by weight along with a few pieces of cinnamon sticks. Let the mixture boil until you see a thread stretching down when you lift a fork out from the mixture.
Allow it to rest for a bit before dumping in all the cooled-down fried minions giving it a gentle shake until they're all covered with the glaze.
You may also use vanilla bean on its own or together with the cinnamon sticks.
I have also found that apple juice goes well with these treats.
I certainly hope this makes for a wise use of the extra dough.
