There is not a dull moment when Theo is around. How he is within his trusted circle says a great deal of his penchant for life directly echoing in the bounds of Public Café.
Just as the loukoumades were getting ready, answers were swiftly flowing in our mini interview with Theo one breezy afternoon.
1.) What's the story behind Public Café (PC)?
Public Café is a concept created from the love and need of the owners for good quality coffee and food. It took some time to decide where to position ourselves in the market. We realized the workers' environment in this region is desperate for good coffee to keep one alert and go through the day. So here we are with our commercial concept, under 1 Lake Plaza building in JLT, Dubai, and, as many say "the best coffee place in town".
Public Café now has a big variety of sandwiches, salads, and bakery items prepared on the spot - fresh - and other deli items containing the best ingredients assembled from scratch. The best moment of a day in PC is when it gets really busy during lunch break - when everybody gets to taste and enjoy the dish of the day (either a Greek recipe or a Mediterranean one) cooked the same way you will cook at home - fresh and using only the best ingredients. No additives. This guarantees your meal with us is healthy and pure.
2.) What makes PC different from the rest?
How many cafés around the UAE are being directly run by the owners themselves?
And I mean "the works" - brewing coffee, serving your orders and sorting your bill at the till?
Public Café has a homey coffee-culture where two Greek brothers work hand in hand ensuring their great passion for a satisfying dining experience is realized. It reminds us of the passionate baristas in Melbourne, the chatty and friendly wait staff in New York, and the cozy and warm nooks of England.

3.) Just for the sake of fun, which came first the chicken or the egg?
Hehehe, thats easy!!! The egg of course 'cause it comes for breakfast and the chicken comes for lunch!!!
4.) What are we expecting from Public Cafe in the next 6 months to a year?
Public Café is expanding. We expect to open our second outlet in the first quarter of 2015 in Swiss tower in JLT serving the commercial tower and the rest of JLT through our expanded delivery service.
5.) You and Sebastian are very hands on. What are your individual roles in this tandem?
Our roles are different. Sebastian, as a coffee expert, handles all items related to the bar and, myself, as a food lover , does all the work behind the scene, in the kitchen. But apart from that Sebastian is the Operations Manager of PC handling the quality and ensuring smooth operations. I, as the managing director, and business development executive, is in charge of making PC as big as it deserves!!!!
6.) This is your moment to shine, give me three big words that define Public Cafe.
Friendly, homemade, fresh.
7.) What is your favorite dessert?
Hmmm...my best one is one that is cooked with love and care. There are no bad desserts there is only bad execution!!!!

8.) What is this craze about the LOUKOUMADES?
Now we talk about loukoumades and, yes, it's one of my favorites. It is a traditional Greek delicacy we serve with melted dark chocolate or can be made into a biscuit containing honey, nuts and cinnamon if you are more traditional. They are small fluffy dough balls accompanied by your favorite topping that melts in your mouth. And always freshly made on the spot. You can enjoy them in PC everyday from 3:30pm to 6:30pm - of course, best combined with your favorite Public Café coffee.
Just as we ended our delightfully fun chit-chat, I was down to my last piece of loukoumades. And I couldn't just get enough of it!
